In AB, your are kicked out after 15s anyway.

In RB/SB, until your pilot goes unconscious or cras,  you will remain in the plane.

Let's say you go in a flatspin without rudder, at 7000m. Do you want to stay in the plane for 2-3 minutes for nothing?

Ref: Vitality.training:

If you want your gunners to stay conscious along with the pilot, this is the best attribute to advance. This will also contribute to repair speed of destroyed aircraft after a battle. The quicker the crew recovers, the quicker they will get on with the repairs (Note: this is the main reason it is good to bail the crew out of the falling aircraft).

There is no default button, but you can set one up under Miscellaneous -> Leave Vehicle. Holding this button will cause you to bail, from an aircraft or tank, no matter what the state of said vehicle is. However, if you bail from an undamaged vehicle, you are counted as "crashed", and if you do this early in a game and then leave your crew will be locked for some time, meaning you cannot join another match. This was introduced to stop people from bailing and leaving a match when they get up tiered and think they can't win.

However, if you bail from a damaged vehicle before it gets damaged more or crashes to the ground, the post battle repair cost will be reduced. Therefore, it can be worth it if you are, for example, in an aircraft with a damaged wing that is slowly spinning towards the ground with no chance of recovery. Bailing from a heavily damaged vehicle will give a kill credit to the last player who scored a hit or critical hit, enemy or friendly.
